The Organico speciality rice range is grown and packed for us in Bianze in the heart of the century-old rice fields of the Northern Po valley. Our partners, the Picco family have been cultivating rice here since 1878. They are dedicated to the environmental stewardship of the land and to preserving the culture and cultivation of rice. Together with other local families they have formed a co-operative to both pack and develop fine quality Italian rice. They grow a wide range of typical and newer varieties on their land. The rice is husked through a stone millling process that is more careful and gentle, therefore helps preserve the nutritional and taste qualities of the grain. The Carnaroli rice grain is known as the 'king of risotti'. Carnaroli has the highest content of amylase amongst different rice varieties which makes the grain more compact, giving a good absorption with little loss of starch. This means the rice absorbs the flavour or the ingredients and liquid and maintains a good hard texture as it is cooked and stirred.
